I wasn’t always the best cook during my early years as a wife and mother. In fact, during the first few years of our marriage I only had about two or three great recipes in my back pocket and at least one of these included a box of Hamburger Helper. Now don’t get me wrong, I have nothing against the Helper and I do still make it on occasion. Ironically, nine times out of ten when I whipped out that box of Helper it was to make beef stroganoff.

At this point in my life I have a few more years of domestic wisdom and cooking experience behind me and now I prefer to make most of our meals from scratch. I’ve even taken up baking which I used to despise. I’m such a grown up, don’t you think?

One of my very favorite recipes in our current weekly rotation is, you guessed it…..Beef Stroganoff! This hearty flavorful dish is not only a serious comfort food, it’s really quite easy to make. Here is my take on the classic. It mayeven be yummier than the Helper version…..who am I kidding? It’s waaaay better!

Ingredients:

  • 2 tablespoons of olive oil
  • 3 tablespoons of butter
  • 1 pound of sirloin beef, thinly sliced & seasoned well w/ salt & pepper
  • 1 onion, thinly sliced
  • 2 cups of cremini mushrooms, thinly sliced
  • 1 can of beef broth
  • 1 cup of red wine
  • 1 clove of garlic, finely minced
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1 cup of sour cream

Directions:

I prefer to prep all of my ingredients right before I start cooking. It just makes everything easier for me. Once you have your beef and vegetables sliced go ahead and season the beef. Then add the butter and oil to a hot pan. Brown the beef (just barely) as it will finish cooking in the wine/broth. Once browned transfer the beef to a plate so you can get to work on the veggies.

Saute the onions and mushrooms until the onions become translucent, about 4-5 minutes. Now you can add the beef back into the pan. Don’t forget all of those juices as they add tons of flavor! Add the broth, wine, garlic, salt, and pepper to the party and bring just to a boil. Now you can lower the heat, cover, and let the whole thing simmer for about 20 minutes or until the beef is tender.

The last step is to add the sour cream. I wait until I’m ready to serve the stroganoff then remove the lid, turn the heat to low and stir in the sour cream. Let it hang out just long enough to heat it through then serve over prepared egg noodles.

  6. Lower heat, cover, and let simmer for about 20 minutes or until the beef is tender.
  7. Just before serving remove the lid, turn the heat to low and stir in the sour cream.
  8. Stir on low heat just long enough to heat it through.
  9. Serve over prepared egg noodles
Notes
  1. I usually use merlot for this recipe but even a good white wine will work in a pinch!
