Thanksgiving is a a time for family, a time for giving thanks for our blessings, a time for……FOOD! My mom has hosted Thanksgiving for as long as I can remember and she goes all out. However, the desserts are usually outsourced. For years my Nana was in charge of the pies and now that she’s gone that job has been passed on to my younger sister.
The only problem? My mom is not a huge pie fan. She LOVES cake! So this year as I was searching for a holiday appropriate cake recipe I came across a few different types of dump cake. You know, the kind where you kind of dump all of the ingredients into a 9×13 dish and it magically turns into something wonderful?
I played around with a few different recipes, tweaked them, and ultimately came up with a Pumpkin Crunch Cake. Or as my husband called it, Pumpkin Pie Plus.
It. Was. Amazing.
1 can of pure pumpkin (15 oz)
1 can of evaporated milk
1-1/2 cups of sugar
1 teaspoon of pumpkin pie spice
1/2 teaspoon of salt
1 box of yellow cake mix
1 cup of chopped pecans
1/2 cup of chopped walnuts
1 cup of melted butter
Mix the first six ingredients together and pour them into a lightly greased 9×13 dish. Then sprinkle the dry cake mix on top. Cover this with the chopped nuts and finally drizzle the melted butter on top. Bake this for about an hour at 350 degrees and VOILA. Pure deliciousness!
We still had our Thanksgiving pies and they were amazing! But it was also nice to have something a little different as well. This cake is so easy and yummy (especially with whipped cream on top)! It’s already been requested for Christmas as well!
